Roasted aubergine and tomato soup



We have another super easy soup recipe for you, this time using a bargain aubergine (eggplant for our American friends) unusually made in the oven, this recipe is based on a Hugh Fernley Whittingstall recipe.  Its frugal and very very tasty and the soup has a lovely comforting flavour, great for a cold winters day.

What you need
  • 1 aubergine (chopped into chunky pieces)
  • Olive oil or rapeseed oil
  • 1 heaped tsp vegetable stock powder ( I use Essential Cuisine)
  • 1 tin of chopped tomatoes
  • Couple of cloves of garlic, peeled and finely chopped
  • Water
  • Salt and pepper
  • Fresh thyme or basil leaves to garnish
What you do
  • Preheat your oven to 180c
  • Place the chopped pieces of aubergine in a roasting dish and toss with a little oil
  • Roast for 20 minutes or so until the aubergine is soft and starting to colour a little
  • Add the contents of the tin of tomatoes to the dish, plus the garlic and thyme to the dish
  • Also add 1 tin of warm water and your vegetable stock cube / powder to the roasting pan
  • Return the roasting pan to the oven for another 20 minutes
  • Remove from the oven and allow to cool slightly, then blitz with a hand blender or in a liquidiser or food processor until you achieve your desired consistency
  • Place the soup in a saucepan and warm gently until piping hot, taste for seasoning.
This dish would also make a perfect starter to any festive celebrations as its a no worry, no hassle and could be made a head and stored in the fridge. Vegan, gluten free and very healthy its a great contrast to the rich festive fare, but its equally suited to make at any time of year.

Spicy sweet potato, lentil and chipotle soup




Its starting to feel a little autumnal here in Lancashire so my thoughts as usual move from salads to soups, I love homemade soup and often knock up a soup for a weekend lunch using seasonal vegetables or something from the garden, luckily for us we were recently given a number of products from Some Like it Hot to try, so I thought the addition of chipotle sauce to a sweet potato soup would make an interesting addition.



This Chipotle sauce is made from Ancho chili for depth of flavour and Guajilla for the intense red colour they bring to the sauce and of course chipotle for the smoky notes. Its a delicious addition to the store cupboard and can be used in place of normal ketchup or as addition to many dishes, as well as this soup we have also tried it in a slow cooker BBQ ribs recipe, which frankly were amazing. In fact so much so that photography was planned for a post but they disappeared so quickly, we didn't take any of the shots !

What you need
  • 3 large sweet potatoes, peeled and chopped
  • 1 large onion - peeled and finely sliced
  • 2 handfuls red lentils
  • Vegetable stock - I always use Essential Cuisine
  • 1 tbsp or more (if you like it more spicy) Some Like it Hot Chipotle Sauce
  • Additional water if required to thin soup to desired consistency
  • A little rapeseed oil or butter
  • Yogurt to serve
What you do
  • Heat the oil in a large saucepan
  • Add the onion and sweet potatoes to the pan and cook over a low heat until the onion is starting to soften slightly.
  • Add the lentils to the pan, along with enough vegetable stock to cover the vegetables and simmer until the vegetable are softened and the lentils cooked.
  • Add the chipotle sauce and blend with a stick blender until smooth, taste and season to taste
  • Serve hot, swirled with yogurt and sprinkled with a little fresh coriander

Parsnip, lentil and bacon soup

I've been clearing out the fridge after the festive period and came across a bag of parsnips that needed using up, Christmas is like that we all buy too much stuff and then end up chucking it out, however we try not to let that happen at Lancashire Food. So here is a comforting warming recipe that is falling of a log simple yet produces great results from some fairly humble ingredients. The recipe would also work well with ham instead of bacon or if you are cooking for vegetarian eaters omitted entirely. 





Ingredients
  • 500g bag of parsnips, topped and tailed, peeled and chunky chopped
  • 1 large white onion, peeled and chopped fairly finely
  • 1 cup of red lentils
  • Vegetable stock
  • Pinch of ground nutmeg
  • 1 small pack of Pancetta / or a couple of rashers of bacon chopped up into small pieces
  • Small knob of butter
Method
  • Start by melting the butter in a large saucepan, once melted add your bacon and cook until golden, remove from pan
  • Now add the chopped onion and parsnips and cooks for a few minutes without colouring, now add the red lentils to the pan and add enough vegetable to cover.
  • Bring to the simmer and cook until the lentils have disintergrated and the parsnip is soft, watch the quantity of liquid you may need to add more water.
  • Once cooked allow to cool slighty, then blend with a stick blender until you reach you desired consistency, add more water if you want a thinner soup.
  • Add the bacon back to the pan and reheat gently
  • Serve with crusty bread


Chai Tea bread

I don't know about any body else but when its cold and blustery outside , I like nothing better than hankering down with a cup of tea and a great piece of cake (always homemade), baking that contains warming spices always seems so comforting to me. Chai tea is also very comforting so I decided to merge the two in this cake , I was very pleased with the resultant warmingly spiced tea loaf, deliciously moist and very moreish.




Ingredients
  • 2 cups plain flour - sieved
  • 2 tsp baking powder (level)
  • 1/2 cup of sunflower margarine
  • 3/4 cup of granulated sugar
  • 2 eggs free range
  • 1 tsp vanilla paste
  • 1/2 cup of chai tea, cooled (I used vanilla chai tea bags by Pukka)
  • 1/3 cup of skimmed milk
  • 1/4 tsp ground cardamon
  • 1/2 tsp ground cinnamon
  • Pinch of ground cloves
  • 1/2 tsp freshly grated nutmeg
  • Pinch of sea salt
Method
  • Pre heat your oven to 180c
  • Oil spray your 2lb loaf tin and line lengthwise with a piece of grease proof paper or baking parchment
  • In your mixer, mix all you ingredients until smooth and well incorporated, be careful not to over mix
  • Pour into your prepared tin
  • Bake for approximately 45 -50 minutes, until well risen, golden and tests cooked with a skewer
  • Cool for at least 10 minutes before removing from tin and leaving to cool fully on a wire rack .
  • Stores well when wrapped in foil.

Leek, Potato and thyme Soup






This is my standby soup recipe, deliciously warming and comforting and a great anecdote to when you need the equivalent of a hug in a bowl. Outside its been bashing down with rain and even when it stops raining its raining leaves as autumn is well and truly well under way. Leeks are fairly easy to grow in the garden and even if your yield is disappointing you normally can rescue enough leeks for soup.

Ingredients
  • 3 large potatoes - peeled and chopped in to chunky cubes
  • 3 leeks, cleaned and chopped into rings
  • Vegetable stock about 500ml
  • Thyme - dried or fresh
  • Salt and Pepper
  • Butter
Method
  • Melt the butter in a large saucepan
  • Add the leeks and chopped potato and cook gently until slightly softened
  • Add the thyme and enough vegetable stock to cover
  • Bring to a gentle simmer, cover and cook until the vegetables are tender
  • Now liquidise half the soup ( I use a stick blender), by doing it this way you still retain texture
  • Add more water / stock if too thick and bring back to a simmer
  • Taste and season
  • Delicious served with homemade bread
